This video shows how fragile life can be and how we can end up not living it. The great Dalai Lama said that it's man who surprises him the most because he sacrifices his health in order to make money. Then he sacrifices money to recuperate his health. And then he is so anxious about the future that he does not enjoy the present; the result being that he does not live in the present or the future; he lives as if he is never going to die, and then dies having never really lived.
I guess this is what "cheating ourselves to believe we'll be last like a fool" means.
Hope Likeafool has explained very well what the arrogant man, the waitress and KT represent (although, I think the it's the KT in black that represents death; the KT in red, in my opinion, represents someone wise who has understood that life is precious; which is why she has a pity full smile towards the arrogant man throughout the song).
I would just like to add that it's when life presents the arrogant man with the ultimate prize i.e. the steak, is when he realises that he's not even capable of enjoying it.
BTW, the waitress looks very creepy when she dances as the arrogant man is dying :)

I guess that the self-confident guy represents the average person who lives like he's meant to be here forever (such as the french voice suggests). The humble waitress stands for the "life", that welcomes you but, as it is "believed to be lasting", it is often disregarded (as a matter of fact in the beginning the guy enters without paying attention to her, throwing her all his stuff arrogantly). Life "serves" you many occasions and possibilities, that you can accept greedily (the red wine) or refuse. But it is not meant to be forever and, suddenly, your supper could be the last one, and death (KT Tunstall) takes over. What do you think? :)
This entire cd….I can't even explain how moving it is…the melodies, the voice..full of substance and reason...the complexities of the lyrical fruit bursting on the vine…it's almost moving to tears but then, at the perfect time some beautiful lyric catches your soul like a balloon and lifts you up.
